I made some homemade bagels over the weekend. They ended up on the smaller side, but pretty tasty for my first time baking bagels.  I used this recipe, which I think worked out pretty well, except I think the bagels should have baked at a higher temp in the oven.  But, hey, not bad… MORE

We have so many bananas here in Trinidad! Often the heat in the kitchen during the day makes them ripen very fast. Personally, I like bananas at the "just ripened" stage. Once they get too many spots or browned skin, I put them in the fridge and make banana nut bread soon… MORE

Last fall I was diagnosed with type 2 diabetes.  I also learned that with diet and excercise I can make it go away, or reverse it.  I take Metformin and am losing weight hoping to get rid of it.  However in the meantime I need to re-learn what to eat and watch my blood sugar and carb intake. … MORE
