In this video, you’ll see how to make a creamy mushroom stew with assorted wild mushrooms. Chef John uses lobster mushrooms, chanterelles, shitake, and good old-fashioned button mushrooms in this quick and easy recipe. But you can use whatever mushrooms you like. You’ll see how to prepare different types of mushrooms for the sauce. Then you’ll witness the famous “sauté pan inside of a sauté pan” trick. A couple splashes of wine vinegar and cognac and a dollop of Chef John’s homemade crème fraiche finish off this simple recipe, deliciously. Make this stew vegetarian by using vegetable stock instead of chicken. See the video, then get the recipe for Chef John’s Creamy Wild Mushroom Ragout.

WOW! That looks so good. I just made my first ragout and I was curious if I did it correctly so this video was very helpful. Can't wait to scrounge up some of my own mushrooms - yum! (And yes, I'm totally about to watch the creme fraiche video.)
