If using fresh instead of canned artichokes, it's best to buy the mini artichokes. Trim and cook through entirely in water and cut up. The entire mini artichoke can be eaten, choke and all, b/c it is so tender. It is just as good though w/canned or frozen and saves time.

Has anyone made this adding some melting cheese to it? I prefer having that in my artichoke dip. Thanks.

I make this but put in chopped Spinach. It is wonderful!
