Chef John proves once and for all: delicious doesn’t need to mean complicated or elaborate. In this video, he demonstrates a simple technique that creates tremendous flavor using just two main ingredients—chicken and mushrooms—plus salt and pepper, a splash of olive oil for sautéing, and just a touch of butter for finishing the dish. It’s easy! The trick is searing the chicken to a beautiful brown crust and cooking the mushrooms so they give off their natural juices. Watch Chef John perform this exercise in extreme restraint, then get the recipe for Chef John's Chicken and Mushrooms.Delicious on its own, this recipe is also a good starting point; and Chef John offers suggestions for elaborating on this basic recipe. Wonderful. A chicken and mushroom dish that does not involve a can of mushroom soup!

This is the best chicken and mushrooms I have ever had. My husband really loved it. Made by following the original recipe, the mushroom sauce was flavorful and delicious. Easy to make. Had to restrain ones self to keep from adding other seasonings but really did not need them. Tastes like it had lots of other ingredients. Roasted mushroom flavor came thru really well. Will make this again.

I've made this many times just as written. The simplicity is what makes it. Two ingredients. I've done with beef and peppers and pork and garlic (mahvelous!)as well. The point is to make you think, I think!

Onion and garlic can't hurt this recipe. But it can stand alone with just the two wonderful both ways

This looks fantastic and yes, I kept thinking I would add more than just water to the fond. But in the end this chicken looks absolutely wonderful! I think one would have to buy regular chicken breasts and then debone them so that there would still be skin on the chicken breast.

I'm no great cook. I try but it is usually hit or miss (mostly miss). I often overdo it. I just go that one step to far and whatever dish I am making goes to ruins. Just made this exactly as shown and my 18 year old daughter tells me that this is the best thing that I have ever made. Less is more.

Delicious! I was skeptical, but made this exactly per the video. Served with mashed yams and green beans and was a fabulous hit with hubby. I am a fan of experimenting with spices, but this is wonderful as is. I will serve this to impress guests. Yum!
