Ok. Here is how I do it. For one cut up, seasoned chicken, simply char the chicken on the grill for a bit on high, then add sauce. Then cook until the chicken looks like you like it (blackened or slightly charred. Note: the chicken is probably still raw at this point. Remove from the grill, place in a glass or microwaveable bowl, seal the bowl with three layers of serran wrap, then microwave for about seven to nine minutes on high (some microwaves cook faster than others). Leave the chicken sealed inside the bowl for five to ten minutes. The chicken will steam to "bone slip tender" every time!!!

I grill almost every day and have my whole life. The start on high then finish on low is the most reliable method. It's essentially the same technique as searing a roast before putting it in the oven. The high heat creates a crust that allows the chicken to cook more evenly on the low/med heat. Cooking on constant med/high to high will increase the chances of charring the outside and either dry or raw insides.

I didn't know about lowering the heat either. My husband is usually the grill chef, but I don't always like to wait on him to prepare food on the grill. These tips will help me get out there and claim my throne as "Queen of the Grill"!

i got a ideal a new twist to fried chicken it garlic salt and cerole season then black pepper also don,t forget the flour then somehotsauce.enjoy and atoss salad on the side.

Didn't know to lower the temp during the grilling to cook evenly.. I'll have to remember this for summer grilling (and let the hubs know too!) :D thanks!
