A neighbor just gave us a bag of fresh sweet potatoes from North Carolina. They are so good and I normally bake them. I agree that baking definitely brings out the sweetness. Looking forward to making the pie. Thanks for the tips.

As you mix your batter, lift your wisk and pull off and discard the strings from the potatoes. This will give you a much smoother pie.

I think the potatoes are sweeter when you bake them, then u can use less sugar
