This is the recipe for the paste used to make Puerco Pibil...you know, so you don't have to go buy the weak stuff.

Across the Border Tequila Shrimp

Submitted by: IrvineHousewife

I used to visit my friend Teresa in Brownsville, TX. We would cross the border to this open air vendor/food stand to eat this. The cook did not or could not hide her ingredients, so we know what was put in this dish. You can serve this with rice, beans, or make it into wraps. The ingredients are very forgiving, so feel free to increase or decrease the amount stated.

This is a delicious, traditional Peruvian chicken stew in a spicy, nutty cheese sauce. It takes time, but is well worth it!

Ajiaco (Beef and Pepper Stew)

Submitted by: damasio
This is my take on the ubiquitous Latino stew, ajiaco. This version uses leftover roast beef, sweet red peppers, and creamy baby potatoes simmered together in a spicy broth.

Amazing Calavacita and Pork

This Mexican recipe was handed down to my husband by his mother. A blend of zucchini, onion, and pork that is simmered together, and then served with warm tortillas. A simple but delicious recipe.

Anne's Homemade Chorizo

Submitted by: ANNEK85925
This chorizo is delicious, easy to make and way better than store bought. I keep some in the freezer at all times for a quick and easy breakfast burrito with scrambled eggs, and cotija or Monterey Jack cheese. Enjoy!

Mini empanadas are filled with a spiced apricot jam and fried until golden. This is a wonderful traditional dessert served at Christmas time in my family. You may omit the cloves if you prefer a less spicy version.

Oregano, parsley, onions, garlic and a dash of cayenne pack plenty of punch in this bread machine loaf. Use it for sandwiches, or try it toasted.

The flavors of paprika, apple, and a little barbeque sauce may seem an unlikely combination, but they work together well in this beloved lentil stew!

My original version for the Argentinean recipe. Rich and delicious. Any meat can be used for this recipe, just be sure to cut it up into tiny pieces.

At first glance you'll say 'whoa! that's way too salty for me to try...' but stick with it. This is one of the best rib recipes I've ever tried. Very quick and easy.

This Arroz con Leche is the Cuban version of rice pudding. It's richer and sweeter than regular rice pudding. Being Cuban myself, I prefer this version of this delicious dessert to any other.
