My interpretation of a spicy Caribbean side dish served at a legendary Jamaican restaurant in my town. I like to serve this with a full Caribbean-style meal of Jerk Chicken, Jamaican Rice and Peas, Fried Plantain and cornbread.

This starts out as the classic Chicken Cordon Bleu, breasts stuffed with ham and Gruyere cheese. Instead of the traditional bread coating, a refreshing vegetable julienne is added to the package. Replace the vegetables with shrimp, or encase it all in puff pastry, to dress it up for a party.

These pork chops are marinated in a Jamaican jerk-beer and rum marinade. I like to buy a whole pork loin then cut them into chops so that I can get the thickness just right. You can also use the marinade with pork tenderloin, baby back ribs, and chicken.
