This Indian dish combines fresh spinach and ricotta in a creamy curry. Use paneer if you can find it! It is absolutely wonderful with basmati rice or naan (Indian flat bread). The key is in the spices, which you can find at an Indian grocery.

Here's a variation of Aloo Gobi, a traditionally dry Indian dish consisting of potatoes and cauliflower. This recipe calls for coconut milk, tomatoes and chickpeas for a savory main dish in a spicy sauce. Serve with basmati rice or, better, with breads such as roti, naan, or pita.

This is a simple and easy to toss together recipe using cauliflower. Serve this dish with Indian breads such as thin rotis or naans - even a pita bread will do! Garnish with cilantro if you'd like. Asofoetida can be found in some grocery stores, but will most likely be found in an Indian grocery store, it is often called 'hing'.
