Cawl (Traditional Welsh Broth)

This recipe is popular with the local farming community of Cardiganshire. There are regional variations throughout Wales as to what meat is used; some use Pork or Mutton, we use Shin Beef. This soup tastes better after subsequent reheating, so it's probably a good idea to make the cawl a day before consumption.

A Welsh friend passed this recipe on to me. Vinegar adds a very faintly sour taste that enhances this cookie.

Tomato Rarebit

Tomatoes flavor this rarebit made with Cheddar cheese. Serve over toast at tea time for a traditional snack. Great for a hot lunch during those cold winter days. Just add ham or sausage and serve with a salad to complete a evening dinner.

A dollop each of molasses and brown sugar barely sweetens this light bread riddled with raisins and caraway seeds. The bread machine makes short work of the preparation for you.

We attended a county fair in Wales and the ladies of the local church were baking and selling these. We asked for the recipe and they graciously shared it with us. This has been converted to US standard. They are delicious and not as sweet as some of our style cookies. Dried currants can be used in place of the raisins.

Welsh Rabbit

I believe this recipe is the same as Welsh Rarebit, the classic British topping for rye or white bread toast. Melted sharp Cheddar cheese is complimented by Worcestershire sauce and a hint of cayenne pepper.
