Basa is a new fish that is common in many markets here in Houston. It is a mild, tasty fish.

A true fusion of 'Tex' and 'Mex' style chili. I've made this recipe dozens of times, and it is great. Each bite slowly delivers a sweet flavor followed by dry heat afterwards. It takes a while to prepare, but well worth it.

You can either stuff the fish with the seafood filling or simplify this recipe for yourself by spooning the stuffing on top of each fish fillet.

Pancetta Wrapped Shrimp with Chipotle Vinaigrette and Cilantro Oil

This dish makes a hearty and filling main dish and is also great to serve as an appetizer or hors d'oeuvre.

Queso Catfish

Submitted by: FlowerFrogGirl
Crisply breaded catfish is roasted in the oven, and served with a chipotle cheese sauce. A deliciously crunchy and spicy way to serve catfish inspired by a similar dish I had in Beaumont, TX.

Jalapeno pepper slices are stuffed with a sausage and cream cheese mixture, then wrapped with bacon. They're a spicy, mouthwatering party favorite! Secure the bacon with toothpicks.

Shrimp Kisses

A perfect blend of shrimp, bacon, and cheese baked in the oven. What could be better?

You can't just go to any restaurant and get smothered chicken like you would if you went down to the urban neighborhoods in Houston. This meal of browned chicken in a savory chicken gravy sauce is best when served over a bed of white rice.

Spicy Soup

This is a creamy peanut butter soup with celery, broccoli and cauliflower cooked in chicken broth spiced with red pepper flakes and fresh garlic.

This is a great spicy recipe for shark and shrimp. You can probably get non-seafood eaters to enjoy this! I did!

Texas Smoked Flounder

Submitted by: JVCALLAWAY
Nothing tastes better on a summers day then smoked fish. This can be adapted for trout etc., but the flounder cooks quick. It might take a couple tries for the novice smoker to time it right, but the effort is worth it. These are great as a main course, or a snack during all day grilling sessions. We don't just fry fish down here, we smoke 'em! Besides, aren't you tired of flipping burgers like the rest of suburbia?

Cream cheese, chicken broth and milk provide the creamy base for this corn chowder seasoned with cumin, chili powder and picante sauce.

Ultimate Gulf Coast Gumbo

Submitted by: Robert Wilson
Gumbo filled with shrimp, crab, chicken, sausage, vegetables, and Cajun spices. I've also included crab and/or scallops in this recipe. Serve over rice, accompanied with garlic bread. Also have salt, red pepper flakes, and additional file powder on the table. Great with cold beer.
