Custard pie is brightened with crushed pineapple in this fun and easy pie. When I was little, my best-friends great-aunt Tootie would make this pie for the family each and every summer at her home in Iowa and it became a favorite of my family too!

Bologna Salad Sandwich Spread I

A girlfriend's mom made this spread years ago for our Teen Club Luncheon back in Iowa in the 50's. I asked her to tell my Mom how to make it. I made the recipe for my kids while they were growing up & they still love it. Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, creamy salad dressing and relish should be adjusted to taste.

Onion flavored ground beef with broth is served on hamburger buns in this Iowa classic sandwich. I came up with my own version of Iowa MaidRites which also are called 'loose meat' sandwiches. Very versatile, leftover beef can be used for spaghetti or taco filling, or it can be frozen for later use.

This is a traditional Danish casserole taught to me by my grandmother. The combination of meat, vegetables and spices makes it very tasty, and it is also easy to prepare.

This dandy pecan-less pie combines rolled oats and coconut in a sweet, sweet buttery filling. When it 's baked up, you 'd be hard pressed to tell it from the real McCoy. Serve it with whipped cream.
