A spicy Texas style chili: no beans, tomatoes or ground beef. Great on a cold winter day and goes especially well with Golden Sweet Cornbread (which can also be found on Allrecipes). If you don't want to use beer in the chili, simply replace it with the same amount of water.

Shay's Irish Chili

Home Town: Cincinnati, Ohio, USA
This is a wonderful dish for cold winter days that really fills you up! My mother used to make this for my family and it quickly became a favorite. This isn't your normal 'hot' chili and it's a great change of pace. It's best when served with buttered saltine crackers. This chili also freezes well.

Lauren's Cincinnati Chili

Home Town: Georgetown, Texas, USA
Cincinnati's famous chili dates to 1922 when a Moravian immigrant created a dish with Middle Eastern spices including cloves, cinnamon, and allspice; along with chocolate, cayenne pepper, Worcestershire, and tomato sauce; and used the mixture to season ground beef. Served over spaghetti, the spicy dish with many variations has been a hit every since.

This is a very good chili made with pineapple for sweetness. Since this is a large recipe, you might want to go half-batch if this is just for a small family.

'MOM'S CHILI was the best! She knew just the right ingredients to put her 'stamp' on it. I could eat it with my eyes closed and know it was her recipe! It amazed me that she could put it together in so little time.

This chili always has everyone coming back for seconds--that's because I use fresh tomatoes in the recipe. I've been married 31 years and our two grown children still like to come home to eat 'Mom's cooking'!
