Marinated Mushroom and Eggplant with Peanut Sauce

Lot 's of goodies dress up these skewers of mushrooms and eggplant: peanut butter, coconut milk, cumin, coriander, sunflower oil, ginger, lemon juice and garlic. They make a tasty marinade for before the grilling and a peanut sauce for after it.

I used to visit the restaurant of a friend who was a chef. He made the best mushroom sauce for beef, but would not share his recipe. After trial and error, I think mine comes very close to his. This haute cuisine sauce makes everyday steaks or roasts into something a little more elegant.

I am overrun with wild cilantro in my back yard. Literally, it feeds my compost bin more than my family even though we use it in everything. This sauce (perhaps more of a pesto) is fabulous on anything but the obvious choices are chicken and tuna. Enjoy.

Peanut-Tamarind Sauce

This is a perfect sauce to pour over fish, chicken, rice and noodle dishes. One of my friends even likes to pour it over waffles, but I don't recommend that, she's a little nutty. It makes a good dip for chicken fingers, shrimp rolls (what can't it do?) I make extra large batches and give some away bottled. 

Grandma Augusta's Spaghetti Sauce

I like to serve the pesto over butter gnocchi with an extra sprinkle of Parmesan cheese. Gnocchi are light little Italian potato dumplings, which are available in Italian grocery stores and cook up in mere minutes.
