These hearty bread dumplings will anchor you during a windstorm and sustain you through the deepest winter, especially when dished up with roast pork, red cabbage, and lots of pan gravy. Many thanks to my husband's family for sharing this recipe.

My mother was one of the best cooks I ever knew. When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That's the only way I cook today - I don't use any electronic gadgets to cook with except an electric stove.

German Spaetzle Dumplings

A simple dough of flour, salt, white pepper, nutmeg, eggs and milk is pressed through a spaetzle maker or a sieve to produce strands of dough. Boil in water or broth a few at a time until they float, then saute in butter and sprinkle with fresh parsley.

My Bavarian Oma made these large dumplings to accompany roast pork or game dishes, any meat with gravy, or with mushrooms in a creamy sauce. Serve one dumpling alongside your meat, and cover with a little gravy.

Pioneers didn't have much, but what they did have they made the best of. This is a cross between dumplings and noodles, uses only 4 ingredients and is a great comfort food. We have never modified it from the original recipe which has been passed in our family I think forever. 

Dumpling Soup

A simple soup made with potatoes, bacon and onion with home made dumplings. My mom always made this soup on washday as it was quick to make and very satisfying. It's still a favorite today for lunch. Pepper may be added at the table. Serve with fresh bread and butter. This is a very hearty soup, if served as supper, it is a complete meal.
