Old Settlers' Baked Beans

My husband likes spicy dishes, and this is one of his favorites. He usually takes what's left to work for lunch the next day. We have a 4-year-old son, and this is the only way we can get him to even touch beans!

Wonderful mixture of beans and sausage in a tomato sauce, slowly cooked and really tasty. Maureen had a Labor Day picnic for our block every year and always made these beans. Everyone always looked forward to having this sidedish with dinner.

Smoked bacon adds zest to this bean bake, a recipe I got from my mother. I must confess that lima beans have never been among my favorite foods. But I actually like them in this casserole, and their color brightens up the mixture. -Jill Evely, Wilmore, Kentucky

This recipe is popular on both sides of the border. It came from a friend in Alaska, then traveled with me to old Mexico, where I lived for 5 years, and is now a potluck favorite in my Arkansas community. It's easy to keep the beans warm and serve from a slow cooker. -Barbara Short, Mena, Arkansas

Because it makes such a big batch, this popular four-bean bake is perfect for potlucks...but I like to serve it with rolls and a salad at home too. We take the leftovers for lunch during the week. -Barb Wilkin Coshocton, Ohio

Since there's food galore during the holidays themselves, I like giving this zippy mix as an after-Christmas present instead. I just slip the containers of seasoning, beans and rice into a decorative paper bag. A recipe card completes the package.

One of our family's all-time favorites. Make it as spicy or mild as you please. It is hearty on a cold winter's night. If you are cooking for a crowd, this recipe can easily be doubled. Be sure to serve this with cornbread!

This hearty melange of beans works just as well at the Thanksgiving feast as it does at a summer barbeque. Using canned beans makes it practical to incorporate the variety of legumes required for the calico effect, and simplifies the preparation.
