Pappardelle Puttanesca

A fantastic variation of a simple but delicious Italian dish, my Puttanesca is a mildly spicy white wine tomato sauce with fresh garlic, mushrooms, capers, and anchovy-stuffed green olives. The anchovy-stuffed green olives are easy to find next to the rest of the canned olives at any major grocery store. 

Garlic Anchovy Linguine

This is a fabulous recipe for a light and flavorful linguine dish that's full of veggies. The mixture of anchovies and garlic creates an amazing flavor and aroma, while the crushed red pepper flakes add a nice kick. For true garlic lovers, add more cloves, if desired.

For vegetarians in attendance, you can also prepare a version with finely chopped (and drained) herbed tomatoes as it is equally delicious. You can serve the dish hot or cold on toasted Italian bread.

I made this recipe to combine the tastes of eggplant parmesan and caponata, an Italian eggplant appetizer. It is quite rich and uses a lot of olive oil. It is best served with linguini or some other kind of pasta on the side. It is a bit sweet and a bit salty with a nice texture.
