Al Capone Roast

When I was young, my mother used to buy cuts of meat at a butcher shop in the north end of Boston called Al Capone's. That night she would always make her Al Capone Roast. This is a variation of my mothers recipe.

Strips of flank steak are marinated overnight in a very flavorful mixture of hoisin sauce, soy sauce, ginger, sherry, barbeque sauce, green onions and garlic. Skewer, grill and serve as an entree or appetizer.

Honey, vinegar, garlic, ginger, oil and soy sauce are blended and then poured over flank steak. The meat sits in this tangy marinade overnight in the fridge, and emerges flavorful and very tender. Grill, slice, and serve. 

BBQ Steak Teriyaki

You start with a bottled teriyaki sauce, and add a few things of your own: ginger, orange zest, sesame oil, vinegar, cayenne and garlic. Pour over the flank steak, marinate for a few hours and grill. 

Beef Fajita Salad

Bottled Italian salad dressing is dolled up with a bit of cumin and pepper sauce. Then it 's mixed into cooked strips of beef, red onion, kidney beans, and corn. Even better when tossed with salad greens and lots of shredded cheese.

There's just something about soy sauce and lemon juice that makes flank steak become moist and flavorful. The longer you marinate the meat, the more tender it gets. Grill and slice on the diagonal, and you have a great meal.

Cubes of beef, pork, and chicken are mixed with lots and lots of onions and marinated overnight. Then this mixture is layered into a casserole dish with salt pork, potatoes and pastry. On goes the top crust, and this thick and hearty peasant pie is baked for 5 to 6 hours.
