'These carrot patties were a big hit with my children when they were growing up,' reports Phyllis Moody of King William, Virginia. Cornflakes provide the taste that kids find so appealing, while the low price--just 18¢ a burger--makes them attractive to parents.

A salsa and sour cream sauce helps dress up these hearty vegetarian burgers. 'My fiance, who's a confirmed meat-and-potatoes man, loves these sandwiches and asks for them often,' relates Laura Wimbrow of Ocean City, Maryland.

Black beans and sweet potatoes are spiced up with jalapenos, cumin, and garlic, then broiled in the oven for a cake that's less fat but just as flavorful as the fried kind.

Use soy. No, use beans. No, use oats. No, use rice. Hey, why not use them all? This veggie burger is an alternative to eating its beefy cousin. It's high in fiber and as a stand alone patty, actually tastes pretty good. Once you layer the ketchup, mustard, pickles, etc. you won't be able to tell the difference.

This wonderful meatless dish is quite tasty, and a great alternative to beef burgers when served on a bun with tomato and lettuce with mayo or stone ground mustard. Good served hot or cold. We have used these as main entrees or served a smaller version as side dishes. You may want to experiment with different spices that appeal to your family or even different vegetables such as zucchini. Cheese is another tasty add-in.

Falafels so good they blow store bought ones out of the water. Serve on pitas, with your favorite sauces and toppings, or on buns like a burger. This recipe is good accompanied by any Middle Eastern dish such as tabouleh or roasted potatoes.

These wonderful patties have undergone several transformations since I first tried them. I have used different soup mixes to season them, and added chopped nuts for texture. They are tasty with a tomato sauce topping or baked in a mushroom sauce for a fancy dinner. I like them best fixed up like a hamburger with lettuce, tomato, cheese, mayo, ketchup and alfalfa sprouts on a bun or good home-made bread!

A fried vegetarian bean burger made with great northern beans. This recipe makes a lot, so stock up the freezer unless you are feeding a crowd. Serve in pitas or on hamburger buns with your favorite burger toppings.

These no nonsense nut burgers are great. I have yet to find a recipe or a restaurant that makes as good of a version. Serve with chips... tortilla, blue corn, sweet potato, or other veggie chips.

Butter beans mashed and combined with onion, jalapeno pepper, cracker crumbs, egg, and cheese, then shaped and fried into vegetarian burgers. You can substitute bell pepper for the jalapenos for a milder taste.

Tofu Burgers

This recipe uses tofu that has been frozen for 72 hours and then quickly defrosted. Onion, celery and cheese make these burgers delicious. This is a family favorite at the Silverwolfs' den. Serve in place of meat as a main entree or place on a bun along with your favorite toppings: lettuce, onion, tomato, mayo, etc. These burgers can also be baked in an oven preheated at 350 degrees for 30 minutes rather than frying.

Mushroom Patties

Cottage cheese, pecans and two soups - onion and cream of mushroom - give these a wonderful taste and texture. The patties are first sauteed in a skillet until nice and brown, and then transferred to the oven to bake in milk and mushroom soup.
