'I had a hard time getting my three sons to eat vegetables when they were young.' recalls Lucille Wermes of Camp, Arkansas. 'So I fooled them with this casserole that looks just like stuffing when it comes out of the oven. Now that they're grown, they sill ask for 'broccoli stuffing' when they come for dinner.'

The flavor of this basic bread stuffing is boosted by the addition of several cups of chopped celery. This recipe yields enough dressing to stuff a 10-15 pound turkey. Bake the dressing that doesn't fit in the cavity of the turkey in a buttered baking dish. Try putting the stuffing under the skin of the breast. It makes the turkey very moist!

This stuffing is great for vegetarians and non-vegetarians. It has a wonderful light and fruity taste. Since most of my family has been vegetarian for 25 years, we make this stuffing in a casserole instead of stuffing it in the turkey. You can, however, stuff the turkey with it and it is just as good!
