Freshly grated apples merge with sugar, matzo farfel, egg whites and cinnamon to create a scrumptious baked kugel. Matzo farfel can be found in many grocery stores, although you may have to try a specialty shop. 

Passover Chocolate Chip Meringues

To make impressive chocolate tidbits, simply beat egg whites with sugar, vanilla and salt to form stiff peaks. Fold in chocolate chips, drop by the spoonful onto lined cookie sheets and crisp them in a warm oven. Do not refrigerate these fragile cookies!
