Such a perfect name for this squash. When it's baked, its meat looks like glistening strands of pasta. For this recipe, the squash is baked and then combined with feta cheese, sauteed vegetables, olives, and basil. Lovely.

This dip recipe was given to me by a co-worker some 15 or more years ago. She made it for potlucks at work, and it was always gone from the nurse's station before the rest of the food was put out! It's a simple mixture of beef and cheese, but it should always be made a day in advance to allow the flavors to blend. Serve with your favorite corn chips.

Mock Peanut Brittle

We grew up munching on this cornflake chewy snack. Of all snacks, this has to be my favorite. After all these years I don't know where this recipe derived from. Didn't have one to follow. Always prepared from memory after being taught by my mom.
