I can remember my mother preparing these hearty 'meal-in-one' waffles when I was growing up. Now I often make them for my own clan using eggs from our chickens, and homemade sausage and applesauce.

Asparagus Bake

Submitted by: Bobbie Pearsall
I make this for breakfast/brunch the day after Easter. It's a great way to use up leftover dinner rolls and cooked vegetables. Everything bakes in one pan so assembling this dish is easy. You can substitute spinach for the asparagus and add mozzarella cheese if you wish.

Last spring we visited old friends who serve this egg dish for Sunday breakfast before church. I thought it was wonderful and full of flavor. Besides, it's easy to make ahead. I use fresh asparagus and serve it with muffins and fresh fruit. --Betty Jacques, Hemet, California

Best Buckwheat Pancakes

Pancakes just taste better made from scratch, and these are no exception. A mixture of white and buckwheat flour and buttermilk add a special taste and texture. They puff and brown beautifully. Best we 've tasted.
