Apple and Carrot Christmas Pudding

This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It's wonderful served with rum or cranberry sauce. For variations, try lemon or chocolate sauce. You can also line the mold with pecan halves or cranberries before filling. Be creative and add Christmas decorations to the plate before serving. The sky is the limit.

The richest dessert I've ever tasted! A sort of a caramel pudding. It's so rich you'll probably only want a small serving . . . You can substitute Cool Whip for the real whipped cream if you want to save some calories, fat, and/or money in this recipe. (The way it stands, it costs over $15.00 to make!)

This bread pudding is very versatile and lovely in texture. Christmas time can inspire a bread pudding by simply substituting a good-quality eggnog for the milk (or part of it). Also add a pinch of nutmeg and mace to produce a sumptuous holiday dessert. Otherwise, enjoy this just as it is with a dollop of whipped cream.
