Best if cooking is started the day before serving. Boston butt is the easiest to make on a small scale. Use a shoulder or a whole shoulder (which is a shoulder plus the Boston butt) for larger crowds. The sauce skimmed off the top is very, very hot and can also be used to make terribly hot chicken wings.

Doug's Killer Sauce

A red sauce consisting of ground beef and pork, tomato sauce, bell peppers and mushrooms. Seasoned with basil, oregano and bay leaves with some red pepper flakes for a little kick. This is a great base sauce. Add more ground beef for sloppy joes, or add some beans and other spices for chili. 

Spicy Pimento Cheese Sandwiches with Avocado and Bacon

A cream cheese sandwich spread gets kicked up a notch by adding jalapeno peppers, pimentos, grated onion, garlic powder, and cayenne pepper. Layered with bacon and sliced avocado, it's destined to become a family favorite. 

Ham and Corn Beignets

Use more fresh corn if the ears are small. Canned white corn, drained, may be used as a substitute for fresh corn. When placing the beignet batter into the oil, a 1 or 2 ounce ice cream scoop may be helpful!

This was my favorite barbecue sauce growing up. It's vinegar-based with no ketchup. It's very tangy, very thin, and wonderful on pork, chicken, and even tofu!
