Delicious! My husband absolutely loves this recipe! Fish is simply seasoned with lime juice then served with a cilantro lime garlic sauce. Serve over a bed of greens with a nice loaf of bread for a complete meal.

This is a vegetable version of the classic Thai Tom Yum soup. You can find lemongrass, kaffir lime leaves, and galangal (a close relative of ginger) at any Asian supermarket. If you can't find the lime leaves, you can add extra lime juice to taste, but do try to find the lime leaves because they make a big difference. It tastes just like my local Thai restaurant!

Mid-Summer Italian Bread Salad

A crusty rosemary bread works nicely for this classic Italian salad. The bread - pulled into bite-sized pieces - tomatoes, cucumbers and red onions, are tossed with fresh herbs and just enough vinegar and oil to give them a nice glistening. Four generous servings.
