For a quick and flavorful classic, saute bacon or pancetta and add onions, garlic and red pepper flakes. Cook with canned plum tomatoes for a mere 10 minutes, stir in fresh parsley or basil and toss with cooked spaghetti. Pass the Parmesan and enjoy!

This is simply delicious, with the emphasis on simple. Rigatoni is cooked with garlic until al dente. Then tomatoes are cubed, sprinkled with basil and oil, and plopped in with the rigatoni to mingle and cook a bit more. Toss and eat.

Chinese wheat noodles are double cooked, first in water until al dente and then mounded in a frying pan until crisp and brown. Then its smothered with a delicious sauce made from rice wine, soy sauce and wilted spinach. Next comes asparagus simmered in garlic and ginger.

A puree of tofu, roasted peppers, tomato paste, vegetable broth, balsamic vinegar and Italian seasoning is stirred into sauteed onion, garlic, asparagus and mushrooms. Add a dab of hot chili paste if you dare, and serve the sauce over cooked pasta.
