If you are tired of simple fried bacon, try this. Bacon is simmered in a spice blend, then cooked until crisp and coated with great flavor.

Blister Beans

Use your favorite beans if you do not like these. Tasty beans without the sugar. I love the fiery taste of Tabasco™, but you might want to back off that ingredient to remove some of the blister.

White rice is the main side dish made in Brazil. This is the way my mom would make it and taught my sister and I. What makes this so different is that we fry it in oil with minced onion and garlic before adding water. You can also use part water, part chicken broth. The secret is to not let it overcook because it should come out loose and not sticky.

Chili-Roasted Kale

Submitted by: SJRJA
This recipe was adapted from one of my favorite methods of preparing broccoli and cauliflower - roasting at high heat with the bold flavor of chili powder. The result with kale is a little outrageous - fiery flavor with a unique crispy texture!

Years ago a friend gave me her black-eyed pea recipe that was not your usual black-eyed peas. She called them Cottoneyed Peas. It was a spicy and warm welcome into the New Year. I now get requests for it all the time. You can make it as spicy as you like or, if you don't like spicy, use the peas without jalapeno.

Creamed Spinach

Submitted by: terry
A spinach dish, creamed with a roux of butter, flour and water. It's very easy to make, but slightly time consuming on account using fresh spinach. It is well worth the effort though!
