This gelatin based salad gets its crunch from celery and walnuts. Serve with a dollop of mayonnaise. Lemon, orange or strawberry flavored gelatin tastes best with this salad.

Another fine summery soup - refreshing, light, and different! Elderberries are common in my native Germany. This soup may be served hot or cold, but is better cold as a summer treat. Serve with gingersnaps crumbled into each serving. Drizzle in heavy cream, if desired.

This is an old family holiday tradition. I guess it is the red color, because strawberries sure aren't in season in December. May be served either hot or cold as a first course or a dessert. We always had it as a first course served hot.
