Stuffed Jack-O-Lantern Bell Peppers

Cut faces into stuffed peppers to make cute jack-o'-lanterns for your Halloween dinner. Use yellow or orange peppers for an even more realistic effect. The flavorful beef stuffing is made with whole wheat bread instead of rice.

This favorite Chilean sandwich from Chef Ruth Van Waerebeek is indeed a meal in a bun. You get meat, vegetables and fruit, all seasoned with traditional herbs and spices and spiked with jalapeno peppers. Another Chilean favorite is The Churrasco o Lomito - thin slices of marinated, sauteed beef or pork loin (lomito), topped with sliced tomatoes, avocado spread and mayonnaise. You can find thin sliced chuck or top round for this sandwich in most meat cases, or have the butcher slice it for you.

Boilermaker Tailgate Chili

This is the chili recipe the gang eats at Purdue Boilermaker football games. I always prep and cook the chili the night before and then reheat the next day. This is a combination of many different tomato-based chili recipes. Good luck and enjoy. 

Doug's Killer Sauce

A red sauce consisting of ground beef and pork, tomato sauce, bell peppers and mushrooms. Seasoned with basil, oregano and bay leaves with some red pepper flakes for a little kick. This is a great base sauce. Add more ground beef for sloppy joes, or add some beans and other spices for chili. 

Double Decker Tacos

Like the ones you get at that famous taco place, only homemade. A soft flour tortilla, spread with refried beans, is wrapped around a crisp taco shell with seasoned meat, cheese, lettuce, tomato, onion, and guacamole.
