Bacon adds flavor to this potato salad with a vinegar-based dressing. This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

This is a really good hot potato salad that my mother used to make for us. You can vary the amount of vinegar and sugar to change the taste around.

In this yummy salad, sliced and cooled potatoes are doused with a vinegar, sugar, and water bath and chilled for twelve hours. At the last moment, mayonnaise, celery seeds, and diced onion are folded in.

What 's nice about this potato salad is that there is not one taste - except perhaps the potatoes - that dominates. There are smidgens and sprinkles of lots of ingredients like parsley, shredded carrot, pimentos and white onion. They all play their part in making the dressing and the salad taste sensational.
