A quick, versatile way to prepare couscous with summer vegetables -- zucchini, yellow squash, and bell peppers, with mushrooms and chickpeas. This fragrant dish is seasoned with smoky paprika, cardamom, and orange zest. 

Ajiaco (Beef and Pepper Stew)

This Asian salad has a decidedly Italian twist. A ginger-soy-rice-wine sauce is tossed into a bowl of just-cooked pasta, shiitake mushrooms and red bell peppers. A sprinkle of parsley and it 's done.

For an exotic, earthy flavor add sliced shiitake mushrooms and bell peppers to a pot of boiling capellini. Toss the warm noodles with a sauce of rice wine vinegar, soy, oil and grated ginger and sprinkle with parsley to serve.
