This hearty soup is a meal in itself when served with a salad and bread. For a spicier flavor, I sometimes substitute Mexicorn for the whole kernel corn.

Corn and cabbage are a different combo in this creamy coleslaw sprinkled with peanuts. 'This salad is especially tasty when I use homegrown corn I've cut off the cob,' reports Patrice Ehrlich of Merced California. It's inexpensive, too, at only 39¢ a serving. 

Ham and Corn Beignets

Use more fresh corn if the ears are small. Canned white corn, drained, may be used as a substitute for fresh corn. When placing the beignet batter into the oil, a 1 or 2 ounce ice cream scoop may be helpful!

Firehouse Clam Bake New England Style

A traditional New England clam bake that will feed a small army! You will have to plan ahead for this one. Lobsters, clams, mussels, potatoes, fish, corn, hot dogs, sausage, and onions all baked/steamed together in layers, in a hole you dig on the beach. Serve with lots of melted butter and bread for sopping up all the delicious juices. 

Jersey Summer Salsa

A quick, simple recipe utilizing all of New Jersey's favorite summer produce: tomatoes, peaches, and corn. Easily adjusted to suit your fancy in terms of sweet/spicy. A favorite in my house, where the saying goes 'the spicier the better,' and this salsa has the taste of sweet peaches in the background.

This corn chowder is made with plenty of fresh corn as well as tomatillos, hominy, and roasted red bell peppers. Serve with homemade cornbread and a salad. If you start the cornbread while the water is boiling, you can have dinner on the table in under an hour.
