All you need is mozzarella cheese, sliced veggies, olive oil, pita pockets, and a grill. Brush the pita with oil, layer on the veggies and cheese, and then grill until the pita is crisp, the veggies are tender and the cheese is melted.

This is a great recipe for one of the summer's most prolific vegetables. Sauteed zucchini pieces are coated with a zesty marinara sauce and sandwiched with a generous helping of mozzarella cheese. These baked sandwiches are a great vegetarian version of the Italian grinder. They can also be made ahead of time, and heated just before serving.
