If you are fond of Cheddar, than you'll love this recipe. Besides potatoes there 's lots of cheese - even a can of Cheddar cheese soup, which is layered with the potatoes to make this thick and very wonderful scalloped dish. Makes four generous servings.

This turkey is roasted with ancho chile peppers, toasted pumpkin seeds, and apples. My Salvadorian mother-in-law taught me this recipe, and it's become our family's favorite. I want everyone to enjoy it like we do!

A mixture of ground meat, egg, onion, tomato sauce and cracker crumbs baked with a tangy 'sauce' of vinegar, mustard and brown sugar. Recipe lists ground lamb, but can be made with any ground meat. This is the best meatloaf recipe. People who hate meatloaf love this one! No ketchup needed!! 

Marinated Mushroom and Eggplant with Peanut Sauce

Lot 's of goodies dress up these skewers of mushrooms and eggplant: peanut butter, coconut milk, cumin, coriander, sunflower oil, ginger, lemon juice and garlic. They make a tasty marinade for before the grilling and a peanut sauce for after it.

A friend showed us this creation on a camping trip. If you have pie makers, AKA tonka toasters, campfire irons, etc., these are a great dessert and a nice twist on the s'more idea. This can be done in the frying pan too, but it's much more fun over an open flame.

Great salad you can serve on the side of a main dish or add roasted chicken and have as a meal! Chopped Belgian endive and radicchio can be substituted for the baby greens if you prefer a more exotic twist on salad recipes.

After living in Austin Texas for 10 years, my husband and I perfected the perfect margarita. The secret to success is fresh fruit juice only and it doesn't use any pre-made mixes! Don't skimp and try buying juice. Squeeze it yourself or you won't get the best taste! If you are a real olive lover, add pimento stuffed olives and call it a 'Mexican martini'...delicious! and you won't confuse yours with anyone else's if you add 3 olives on a stirrer. :)

An authentic Greek entree that is easy to make and makes you feel like you are in the Greek islands. My sister and I originally ate this dish at a restaurant in Santorini, Greece and went back 3 days in a row to order it again and analyze the ingredients so we could replicate it at home. It is easy to prepare ahead of time and stick in the oven so your cooking is complete before guests arrive! Serve over rice.

An authentic Greek salad from Oia, Santorini in Greece. Traveling through Greece, I feel in love with the Greek salads on the islands because they had no lettuce. When I came home, I was determined to replicate that salad for family and friends. This is a great green salad recipe because extra salad can marinate in the dressing overnight and be eaten the next day in pita pockets as a sandwich.

This one is a salad that has a great combination of sweet and sour. It is great with chicken or any simple entree. I am always trying to make up new, crazy, salads and this one has been a work in process for 10 years. The fresh dill is not a necessity if you have a hard time finding it but if you do care to splurge on fresh herbs, it adds a great flavor!

This is a sour cherry pie recipe that is SO simple I can put it together and get in the oven in less than 10 minutes. The hardest thing about this pie is tracking down canned sour cherries but if you look carefully, you can find them in most grocery stores. When the pie is served, top with vanilla ice cream to add the element of sweet to the sour!
