Steamed Corned Beef

Steamed corned beef is a classic Bahamian dish also known as 'Fire Engine'. Traditionally served with grits for breakfast or with white rice for lunch or dinner. Steam is a Bahamian term for anything fried down and simmered in a tomato base (bologna, pork chops or chicken can also be served this way).

Palusami is a main dish from Samoa made with coconut milk. In the islands of Samoa, we use taro leaves and the Samoan corn-beef but here in America, my family can not live with out it so we use other substitute you can buy at the grocery store.

THIS IS quite an old recipe that I've used for years. I've always thought of it as a good 'living room picnic', because each sandwich is wrapped individually. That makes them easy to eat. This is my husband's favorite meal. I always had a different version of Corned beef hash until I met my Scottish husband who taught me how it was meant to be made. It is a wonderful casserole type dish that is very filling and perfect for cold nights in. Serve with vegetables or crusty French bread.

A wonderful, easy, creamy hot dip that even sauerkraut haters love. I often take this to work potlucks because I can assemble it at work. Just throw everything in and stir a few times. Also, it's delicious when it's overcooked and kind of dry!

Here is a family favorite recipe that while it sounds strange is very tasty and has won over everyone who has tried it. It was born out of wartime in the Philippines we believe. Typically served for breakfast with butter or margarine. Not a sweet waffle. Best in a standard waffle iron (not Belgian).
