Peach Surprise Pie

This no-bake pie has a wonderful combination of flavors. Sweetened cream cheese is spread in the bottom of the pie shell, sliced peaches arranged on top, and raspberry preserves, with a bit of lemon juice stirred in, is spooned over the top.

Fastest one pan, oven baked dessert I have ever made! Kids and adults alike will eat this cold or hot - just give 'em a spoon! (Or perhaps a scoop of vanilla ice cream on top too!). White cake mix can be used in place of yellow.

My family actually calls this peach cobbler but the crispy shortbread-type crust makes it a crisp. Very good with ice cream or sprinkled with pecans before baking.

The first person I served this for didn't like peach cobbler (unknown to me). He really enjoyed it. I just made it because it sounded yummy and I was dieting. No one will ever guess it's 'lighter' than any other cobbler. I hope you like it. Oh! and it's quick and easy.

A sweet baking powder batter is spread in the bottom of a casserole and topped with fresh or canned fruit and a bit of juice. When the cobbler bakes, the batter bubbles up from the bottom and emerges as the top.

French Peach Pie

A yummy filling of sour cream, vanilla pudding and a bit of almond extract is poured into an unbaked pie crust, topped with slices of peaches, and finished with a sweet peach syrup glaze. Chill and serve this lovely pie to raves.
