Baked pineapple is showcased beautifully in this double-crusted pie. The pineapple filling is cooked a bit on the stove to thicken and blend the flavors, and then it 's piled into a prepared crust, topped with another and slipped into the oven to bake. Serve warm with mounds of vanilla ice cream.

This pie is creamy, light and delicious. Condensed milk, whipped topping, crushed pineapple and lemon juice are all stirred and folded together to make a divine filling that everyone will think you spent hours making in the kitchen. Serve chilled with whipped cream and fresh strawberries. 

Frozen Pineapple Pie

This pie is a perfect, make-ahead-for-company pie. Sweetened condensed milk, whipped topping, crushed pineapple and freshly squeezed lemon juice are combined, poured into a graham cracker crust, and frozen overnight. This recipe yields two 9-inch pies.

Pineapple Cream Cheese Pie

This is a make-ahead, multi-layered pie that is better on the second day than the first. The first layer is a sweet, cooked pineapple filling that is spread onto a prepared pie shell. The second is a whipped, cream cheese filling. Alternate the layers and the pie is ready to pop into the oven to bake. Chill and serve with whipped cream.

Fresh or canned, pineapple pieces are splashed with lemon juice, and blended with beaten eggs. This chunky and delicious filling is piled into a pastry crust, topped with a second crust, and baked in the oven until golden brown. Serve warm with French vanilla ice cream.

Pineapple Pecan Pie

A cream cheese and pineapple filling is spread in the bottom of an unbaked pie shell, then sprinkled with pecans which are covered with a mixture of corn syrup, sugar and eggs in this layered fruit and nut dessert. 

Pineapple-Rhubarb Pie

This pie has a wonderful flavor and is unlike those on the site, it does not contain tapioca. It is an old recipe and is easily made. Using young rhubarb makes this recipe unbeatable in taste and texture. I am frequently asked for this recipe.

For this luscious pie, crushed pineapple, vanilla pudding mix, sour cream and sugar are stirred together and poured into a prepared crust. Chill for a few hours and decorate with candied ginger and whipped cream.

Then it 's poured into a graham cracker crust and chilled. Just before serving, it 's topped with a sweetened whipped cream with just a touch of almond flavoring.

Shredded coconut is sweetened and blended with eggs, a bit of flour, melted butter, and crushed pineapple. creamy sweet filling is then poured into a deep dish pastry shell and popped into the oven to bake for an hour. Cool and serve with freshly whipped cream and toasted coconut.
