Easy Valentine Sandwich Cookies

I love sugar cookies that are crisp on the outside and very chewy on the inside. This recipe can easily be made into snickerdoodle cookies by rolling the dough in cinnamon-sugar before baking. I also sometimes add almond extract for a different flavor.

We had a cooking class at Children's Hospital in Orange, CA. These were a favorite for the patients and adults. You should have been there to smell the wonderful scent of cookies right out of the oven and see the children's faces!!!
