This is an old family recipe Don't tell your kids the main ingredient, or they'll make oogy faces. This is a very moist rich cake with a lovely color and the frosting is wonderful. 

Anne's Low-Sugar Chocolate Cake

Dark chocolate cake made with sugar substitute. Granular sucrolose is a heat stable sweetener that can be substituted for sugar in equal amounts. 

Applesauce Rum-Raisin Cake

BaumKuchen

A true Swiss Baumkuchen is almost impossible to make at home. It requires a rotating spit, and almost a gallon of batter, and loads of time. This is a smaller version, although it too takes time. The results taste a little like a Kit-Kat bar. The many layers will remind you of the famous Dobostorte.

I found this recipe handwritten in my grandmother's well-worn cookbook. I've made it many times, and my four grandchildren love it (they think it's just a moist chocolate cake). It's especially appropriate for this contest because our state is known as the beet-growing capital. 

Bertha's Big Bourbon Bundt Cake

This recipe came to me via a friend, Bertha, who just loved any cake that had booze in it. I have, in the past, eliminated the bourbon when making this for kids and it is still wonderful. Basically, it is a variation on a tunnel of fudge cake.

The recipe for this well loved cake has been altered to reduce the fat content. It uses fat free sweetened condensed milk and an oil substitute. It is not frosted, unlike the traditional cake, but does have a cherry topping.
