Spintz Cake

Submitted by: Kevin Ryan
My sister nicknamed me 'spintz' years ago for some unknown reason. When I invented this cake, she named it after me. It is very rich -- moist chocolate, creamy peanut butter filling and fudge frosting.

We always called it the "Busy Cake"...too many things going on with it! Crushed maraschino cherries can be found in the ice cream sundae department at the grocery store. If you can't find them, get regular maraschino cherries and chop.

Chocolate Plum Pudding Cake

This is a bit of an unusual cake, but great for Christmas. The chocolate mixed with raisins, applesauce, and spices gives a nice texture with a lot less work than plum pudding itself.

Chocolate Hazelnut Teacake

Wonderfully rich, chocolate cake with a twist. The crystallized ginger, chunks of bittersweet chocolate, and dried apricots mixed into the batter make this cake very special. It is like finding treasure in every bite.

Potatoes in dessert? Many cooks never think of the possibility. But this delicious cake gets its moist texture from Idaho spuds. We raise them here on our farm, and our son has also developed and markets potato ice cream! --LaRene Reed, Idaho Falls, Idaho

Hungarian Chestnut Cake

This rich dessert is full of all sorts of wickedness, and is a bit labor- intensive, but well worth the work. Chestnuts and marrons glace are available in specialty food stores and gourmet stores.

My Mothers recipe. Great for snacking or you can frost it for a more special cake. One of my family's favorites.
