Serendipity Bread

Submitted by: Sue Litster
A flat bread that starts in the bread machine and ends up on an outdoor grill. My sister 'discovered' this bread when she had a batch of bread dough rising in her bread machine when the hydro went off for the whole day. Incredible.

A busy college student, Sarah McClanahan of Raleigh, North Carolina makes this lightened-up version of flat Italian bread often because it's so easy to prepare. 'Focaccia goes great with soup or pasta,' she says. 'And by adding tomatoes and onions, I can turn it into a light supper.'

I use my bread machine to prepare the dough for this savory Italian flat bread. It's a great addition to any meal. At times, I make it for myself as a main-dish 'pizza'. -Cindy Cameron Omaha, Nebraska

'This popular recipe began as herb focaccia but gradually came to include our favorite vegetables,' writes Michele Fairchok of Throop, Pennsylvania. 'There's no cheese because my husband can't have dairy products. But some people who try it think it has cheese anyway!'

A very delicious Finnish flatbread made with wheat and rye flours. Cream of rye cereal can be used in place of the rye flour if coarse ground is not available.

Crisp rye breads are traditional throughout Scandinavia because rye has a short growing season suitable to far north, and flat breads or crackers store well during long winters. Enjoy this adaptation topped with slices of Norwegian Jarlsberg cheese or Finnish Lappi cheese.

This recipe makes the best naan I have tasted outside of an Indian restaurant. I can't make enough of it for my family. I serve it with shish kabobs, but I think they would eat it plain.

Grandma's Focaccia: Baraise Style

Submitted by: DJK1125
No one else in my family could make focaccia like Grandma did, and when she passed away we thought she took the recipe with her. Then one day I found it in an old recipe box and gave it a try. If Grandpa says it's just like Grandma's, then it must be.
