I tried finding a recipe to get my picky toddler to eat her vegetables. Since I couldn't find a healthy one, I came up with this. Using one cup carrots and one cup zucchini is a nice way to get both the yellow and green veggies into the diet! Any type of nuts, raisins, etc. may be used in the recipe -- whatever is on hand and toddler approved.

These are deliciously moist muffins that that'll disappear quickly! Use carrot or zucchini, or both if you prefer. I make a batch of each, then put some in the freezer (in Ziploc bags) for later, which usually isn't very long! My entire family just loves them!

So many quick breads have virtually the same dry ingredients -flour, sugar and leavening -that you may as well make one big batch to save time on baking day. Then on that day, just use three cups per loaf, and combine with oil, eggs and your choice of fil

There are lots and lots of good things in these pretty muffins. Besides carrots, there 's molasses and eggs and allspice. As well as brown sugar, cinnamon and whole wheat flour. No wonder they are soooooooo tasty. Makes 24 muffins.
