This is the best tasting vegan meal I have made. I am just 1 month in to my vegan journey. However, if any one tells you vegan food is bland. Make this for them and I promise they will change their mind. Great recipe.

This is a great meal in itself and was my first time making quinoa. I doubled the quinoa and soaked it in water for about 10-15 min because i prefer the quinoa soft. Sauteed crushed garlic cloves in the oil until they turned brown and discarded them before i added the onions. Added a half a cup of diced mushrooms and a whole red bell pepper diced to the onions and sauteed for another 5-7 min and added a little salt. Added the quinoa and about 3 and half cups of chicken stock along with the cumin and some paprika. Brought it to a boil and simmered for 20 min. I let it cool before I added a can of corn, can of black beans, squirt of lemon and some fresh cilantro.

Soooo good...even my kids loved it! I only used 1 can of beans in it...which was plenty! I also used a can of corn, instead of frozen. Healthy and delicious, who knew?! :)

Simple & nice blend of flavors. I used half the amount of beans, a bit more corn, and double the amount of seasoning (it's seriously bland without the extra spices, I even added some chili powder for a hint of heat.) I made some siracha/soy sauce marinaded broiled tofu, and it's a nice healthy meal.

So good!! But you definitely only need one can of black beans. The second time I made it, I topped it with homemade guacamole. Amazing.

Delicious! I used frozen peas instead of frozen corn-for more nutrition. Also, I added too much cumin so a good way to counteract the spice is to add some honey. This recipe is good cold or hot! I served with baked sweet potatoes

AWESOME!!! The whole family loved this recipe, and we will put this into our regular side dish rotation. I used chicken stock instead of vegetable and didn't use cilatro (we didn't have any) but otherwise as written.
