I'd never had quinoa before and didn't know what to expect at all; I also don't really trust myself to properly prepare things with which I only have passing familiarity. I was pleasantly surprised, as it turns out: this was awesome! I know the recipe doesn't call for any particular type of frozen corn, but I used white and am really glad that I did. (Incidentally, now that I think about it, it's the same story for the onion: white onion = a good choice.) I halved the recipe and ended up using a whole can of beans, which I didn't think was too much...but then, I'm a pretty big fan of black beans. The only other place I deviated from the recipe was in adding avocado and grape tomatoes after cooking; getting a bite with a little bit of everything (quinoa, onion, corn, beans, cilantro, avocado, and tomato, all together) was pretty perfect.
