Just ate this about 20 mins ago and it tasted delicious!! If you add the extra ingredients from www.MomsFreeGroceries.net it will give it ALOT of extra flavor and make it taste 200% better!! Def have to add this to my weekly cook book

This recipie was absolutley delicious, I felt the flavors were all there, and complimented each other nicely, I liked the use of ingredients that kepth the dish native to its south american roots! The only thing I will do differently next time would be to reduce the amount of time i actually cook the quinoa, it seemed slightly over cooked after i simmered for 20 minutes.

We ate this over spring mix salad for a vegetarian dinner. My husband commented that it would taste great as a burrito filling along with some shredded chicken. The cayenne was masked by the sweetness of the corn, so next time I will up it to 1/2 tsp.

So bland I couldn't even finish it. I used red quinoa, which I've been using in recipes for several years, but other than that made as written.

This was my first time trying quinoa. I doubled the recipe and packed it cold for lunch as a main dish. The only changes I made were to leave out the cayenne pepper and cilantro, simply because I did not have them on hand. Thanks for the great recipe - I'll be making this again!
