This pizza crust is WONDERFULL! I have made it many times since I first found it. I use all purpose flour and let it rise for 10 to 20 minutes depending on how busy I am. besides pizza, I have used this crust for calzones, cheese filled crust, bread, and even deep dish pizza. The crust can be made to be chewy or crispy according to how thickly you roll it out. I love this especially because the other one I used took about 1-2 hours (or even overnight) to rise, and I would have to plan it about a day in advance so that it would have enough time. With this one however, I have a pizza ready and cooked in 40 minutes max. I don't think it turns out as fluffy or chewy if you only let it rise for 5 minutes by the way. If you are doubling or tripling the recipe (like I always do) then I recommend cutting it into about 4 balls before letting it rise so that it will be done sooner. I haven't tried adding herbs or anything else to the dough, so I'll try that next. :)
