loved it.... some how I messed up the dressing, but with sugar and mint it was not hard to fix. Next time I want to make this I need to plan better and buy the peaches several days in advance.

Absolutely wonderful! I substituted the skinless greek cucumbers and used red wine vinegar - I let the vinaigrette marinate over the ingredients for awhile first before eating over lettuce....

Might be good with wallnuts and some kind of chese. Barb suggested feta but I don't know.

This recipe is fantastic!! We enjoyed it so much and will definitely make it again! I invited a young man to eat with us and he was very surprised at how delicious it was and raved about it to my son who is a fast food addict and got him to try it--he liked it too!

Thank-you for this lovely, refreshing recipe! I marinaded my chicken breast for several hours in a little white wine/garlic/lemon juice; then grilled them- chopped the peaches and red onion up ahead of time as well. As other reviewers have mentioned, I did add a bit of oil (olive) to the dressing, but believe it would have been fine without. This IS a beautiful salad that celebrates the bounty of fresh summer produce!

Tasty combination of fresh, local ingredients! I didn't have fresh mint and since the local peaches are so sweet and juicy right now, I substituted the sugar and mint for a healthy splash of peppermint schnapps!

I liked this salad, but my husband did not enjoy it. I cooked the chicken breasts, chopped them and then marinated them in the dressing all day. I also added an avocado. I thought the dressing was yummy!

This was amazing. I forgot the red onions so i just didn't use it. I also didn't use pepper and salt, i let it up the the person eating it to do so. I didn't let it chill before i had to dive in. It was so amazing. More than 5 stars is deserved.
