Worked very well for me.
My changes: 1) 4 c coarse(Cuisinart) grated zucchini (1 extra large zucchini) ,
2) 1 c brown sugar Splenda blend + 3/4 c white sugar,
3) 1/2 c oil (more zucchini keeps it moist)
4) Used 4 "mini" loaf pans (Chicago Metallics) sprayed with misto oil spray.
5) Baked 65 minutes (because of more zucchini)
After cooling for 15 minutes, these slipped out of the pans so easily. Very moist, and delicious!
