These are so easy and delicious. Since others said they lacked lemon flavor, I increased the lemon extract to one tsp and added the zest from the entire lemon. They were perfect. Light and delicious. :)

If this recipe were written with more lemon flavor, it'd be 5-stars! But I LOVE the texture of these shortbread cookies! As others have done, I need to dramatically increase the lemon flavor. I have found that for my taste I need to use 3-4 tsp each of lemon extract and lemon juice (my addition), and only sometimes use lemon zest. Still very crumbly, I just dump the crumbles into the baking pan and press them down, and bake. I typically double this recipe to fill up an 11"x15" cookie sheet and slice these into bars once I pull them out of the oven. With the added lemon flavor, I find these really great lemon cookies, with a lovely shortbread texture!

Where did I go wrong with these squares? The quantity of dough for the size of the baking tin didn't seem to be enough. I made a double mixture to fill up the baking tin. Also I didn't have any lemon essence so I added the juice and zest of one lemon. Would change that to two lemons for a zestier taste. Perhaps my oven wasn't hot enough and I needed to cook it hotter faster. It came out quite dry. Will try again because it is really easy to make!

Delicious! The dough is very crumbly, but most shortbread is. I used my hands to mix the butter in thoroughly and then pressed the dough into the pan as the recipe instructed. The bars came out flaky with a wonderful lemon zest! Very easy to make.

This did not work out for me at all - there was not enough moisture or something. I beat and beat and beat, but never got a soft ball - just crumbs. I even added some more butter, but it did not help. So, sadly they turned out very dry and crumbly with the pecans not staying in...
